USDA Choice vs. Prime vs. Select: What Kingsport Home Cooks Should Know

What Is USDA Beef Grading?

The USDA grades beef based primarily on marbling — the small flecks of fat running through the muscle — along with the age of the animal at harvest. Marbling matters because fat melts as beef cooks, basting the meat from the inside out. More marbling generally means more flavor, more tenderness, and a juicier finished product.

There are eight USDA grades in total, but only three matter to most home cooks: Prime, Choice, and Select.

USDA Prime

Prime is the highest grade the USDA awards, representing roughly the top 2–3% of all beef produced in the U.S. It has the most abundant marbling of any grade, which means exceptional tenderness and flavor. Prime beef is what you’ll typically find at high-end steakhouses — and it comes with a price tag to match. Because so little beef qualifies, Prime can be hard to find consistently at the retail level.

USDA Choice

Choice is the grade most butcher shops and grocery stores build their beef program around — and it’s KPC’s standard. Choice beef has less marbling than Prime but still delivers the flavor and tenderness home cooks are looking for, at a more accessible price point. For the vast majority of home cooking — grilling, pan-searing, roasting — Choice hits the sweet spot between quality and value.

USDA Select

Select beef has noticeably less marbling than Choice or Prime, which means it can be leaner but also less tender and less forgiving to cook. Select works fine for slow-cooking methods where moisture and time do the heavy lifting — braising, stewing, slow roasting — but it’s not the grade you want for a quick-sear steak night.

Why Grade Isn’t the Whole Story

Grading tells you about marbling, but it’s not the only thing that determines quality. How and where the animal was raised matters too.
